If you want to go traditional, gyoza, takoyaki or cold tofu would be great. If you're asking for my personal opinion, I think you'd want something meaty and flavourful because udon is very thick and carby. I'm thinking BBQ meat or grilled eel(unagi).

I like putting Udon in soup. Give s it a bit different appearance and texture.
