They originated in Buffalo.
Buffalo wings were first prepared at the Anchor Bar on Main Street, near the corner of North Street, Buffalo, on October 3, 1964. Teressa Bellissimo, co-owner of the Anchor Bar with her husband Frank, had the idea of deep frying chicken wings and tossing them in hot sauce for her son Dominic and his friends. One evening, on a spur of the moment, Teressa presented her son with a deep-fried and sauced creation, and they were an instant hit. At the time the recipe was created, chicken wings were typically thrown away or reserved for making stock.

A long time ago in western NY there was a heard of buffalo that had wings. These rare creatures soon became prized for the tender meat on their wings. They were soon over hunted, and since they were too difficult to capture alive (they were very ferocious toward humans), they couldn't be held in zoos or farmed, and they soon became extinct. Now we substitute chicken wings for this delicacy, but those of us who have actually had tried the original know that true buffalo wings don't taste like chicken

Because Bison (The American Buffalo) Migrate much like Birds do across North America. Plus the name was a better marketing tool than "Chicken wings". Ever eat a Chinese Gooseberry? Today it's called a Kiwi.
