    Steak Pinwheels with Sun-Dried Tomato Stuffing and Rosemary Mashed Potatoes

    For the Steak:

    Ingredients:

    1-2/3 cups canned beef broth,

    3/4 cup ready-to-use julienne sun-dried tomatoes (not packed in oil),

    1/4 cup butter,

    1 package (6.6-ounce) stuffing mix, Stove Top® (flavor optional)

    1 1-1/4-pound skirt steak

    Salt and pepper

    Instructions:

    Bring broth, sun-dried tomatoes, and butter to a boil in a medium saucepan. Stir in contents of stuffing mix pouch. Cover saucepan and remove from heat. Let stand 5 minutes. Fluff stuffing with fork. Cool stuffing. Preheat oven to 425°F (190°C). Lay steak flat on clean work surface. Sprinkle steak with salt and pepper. Cover steak evenly with stuffing. Roll up steak lengthwise to create a pinwheel effect, enclosing stuffing completely. Skewer seam with toothpicks. Place the steak roll, seam side down, on a foil-covered cookie sheet. Sprinkle roll with salt and pepper. Roast until steak is golden brown and cooked through, about 40 minutes.

    For the Rosemary Mashed Potatoes:

    Ingredients:

    2 packages (11 ounces each) refrigerated prepared mashed potatoes, Simply Potatoes®

    6 tablespoons butter,

    1/4 cup whole milk

    2 teaspoons fresh rosemary, finely chopped

    Salt and pepper

    Instructions:

    Peel back corners of potato packages. Warm potatoes in microwave according to package instructions. Mix in butter, milk, and rosemary. Season potatoes to taste with salt and pepper. Note: May be served with More-Than-Meatloaf Gravy.

    Prep time: 12 minutes

    Cooking time: 50 minutes

    If you've got a crock pot...this is a receipe my kids and I love! Simple and smells so good after an afternoon at the park or errands:

    1/2 cup cocout milk

    1/2 cup water

    8 chicken thighs, skinned

    1/2 cup brown sugar

    2 Tbsp. soy sauce

    1/2 tsp. ground cloves

    2 garlic cloves, minced

    1. Combine coconut milk and water. Pour into greased slow cooker.

    2. Add remaining ingredients in order listed.

    3. Cover. Cook on LOW 5 - 6 hours.

    You can serve over rice or noodles. If you serve over rice, use the remaining coconut milk in place of 1/2 the water used to cook the rice and your rice will be so yummy. Serve with Hawaiian rolls, and fresh fruit. Yummy and no work at all!

    Fried bean tacos!

    Corn tortillas, refried beans, the cheese of your choice and whatever else you like.

    You need a skillet, about 3 tablespoons of oil...

    Heat the tortillas so they're soft and pliable. Stuff them with a couple tablespoons of beans, a little cheese and fold them like regular tacos. Saute in the oil until they're getting golden brown and then drain on paper towels.

    Dip them in sour cream and guacamole if you like (you can get it already prepared at the grocery store in the produce section if you don't know how to make it.)...pico de gallo or salsa..

    It's high in fiber and protein and if you use olive or canola oil it isn't too bad for you...it's quick, easy and tasty!

    I just started using a slow cooker. It is really great. New recipies and as most are stews and soups, I just have to put all the ingredients in at about 11 turn it on and it's ready for dinner. My kids loved the chicken and dumplings I made, I even made a cherry cobbler and vegetarian stuffed peppers.

    Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

    try some international dishes or dishes from different regions of the US. Maybe one nite you can do Southern cuisine and serve up fried catfish & cornbread, another nite do homemade risotto and chicken. Try Indian dishes, couscous, etc. If you (and your family?) are willing to experiment, this should be fun. Try your local bookstore for recipes or www.foodtv.com. This is the Food Network website.

    Tortillia Pizzas

    Take tortillas and lay flat on a cookie sheet.

    Smother with tomato sauce.

    Add ground garlic, ground onion and oregano.

    Add slices of pepperoni.

    Top with shredded mozarella cheese.

    Bake in 450 degree oven for 10 minutes.

    Slice and serve

    Rachael Ray books 30 minute meals and her new magazine is what you need!!!

    Cook some pasta with marinara sauce and chicken breast with vegetables and for dessert: plain yogurt with diced fresh strawberries, a couple raspberries and blackberries.
