What to make?

I know this is not a good question, but i am so out of ideas.

Any ideas on what to make for dinner tonight?

    Chicken Enchiladas

    1 (10.75 ounce) can condensed cream of chicken soup

    1/2 cup sour cream

    1 tablespoon margarine

    1 onion, chopped

    1 teaspoon chili powder

    2 cups chopped cooked chicken breast

    1 (4 ounce) can chopped green chile peppers, drained

    8 (8 inch) flour tortillas

    1 cup shredded Cheddar cheese

    DIRECTIONS:

    Preheat oven to 350 degrees F (175 degrees C).

    In a small bowl mix the soup and sour cream; set aside.

    Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder, and saute until tender. Stir in the chicken, chile peppers, and 2 tablespoons of the soup mixture. Cook and stir until heated through.

    Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up tortillas, and place, seam-side-down, in the baking dish. Spoon remaining soup mixture on top, and sprinkle with cheese.

    Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

    I serve with sour cream and hot sauce. We usually have mexican corn or a salad on the side.

    Spaghetti and Meatball Soup

    2 tablespoons extra-virgin olive oil, 2 turns of the pan

    1 carrot, peeled and chopped into a small dice

    1 medium yellow skinned onion, chopped

    2 small ribs celery from the heart, chopped

    3 cloves garlic, chopped

    3 cups tomato sauce or 1 (14-ounce) can plus 1 (8-ounce) can

    3 cups chicken stock

    1 pound ground beef, pork and veal mix (meatloaf mix)

    1/2 cup grated cheese, Parmigiano or Romano, plus more to pass at table

    1/2 cup Italian bread crumbs

    1 large egg, beaten

    2 tablespoons chopped parsley leaves

    1/2 pound spaghetti, broken in half

    1 cup basil leaves, torn or shredded

    1 loaf Italian crusty bread, for dunking

    Preheat a medium soup pot over medium heat. Add extra-virgin olive oil, 2 turns of the pan, carrots, onions, celery, garlic and saute 5 minutes. Add tomato sauce and stock and cover pot. Turn up heat and bring to a fast boil.

    While soup comes to a boil, mix the ground meat with cheese, bread crumbs, egg and parsley. Roll into 1 1/2 to 2-inch balls.

    Remove lid from soup and slide balls into soup. Bring back to a boil then stir in spaghetti. Reduce the heat and simmer soup 10 minutes more, until pasta is tender and balls have cooked through. Stir in basil and remove soup from the stove. Serve soup with bread and cheese.

    It's ok, I am sort of stumped today too. But, if it helps, I am thinkin' lamb shanks with pasta, or Chicken Cacciatore. Here is the recipe:

    CHICKEN CACCIATORE

    2 1/2 lbs. chicken, cut up (I use boneless)

    1/4 c. flour

    1/4 c. cooking oil

    1 med. onion, chopped

    1 med. pepper, chopped

    1 garlic clove, minced

    1 med. zucchini squash, unpeeled & sliced)

    2 stalks celery, chopped

    1 1/4 tsp. salt

    1/8 tsp. pepper

    2 bay leaves

    1 (16 oz.) can tomatoes

    1 (8 oz.) can tomato sauce

    1/4 c. dry white wine

    2 tbsp. parsley, chopped

    Coat chicken pieces in flour. Heat oil in pan (350 degrees). Add chicken and cook until lightly browned. Remove chicken, add onion, pepper, garlic, zucchini, celery. Cook about 3 minutes. Add chicken, add seasonings, tomatoes, sauce and wine. Cover, reduce heat to simmer and cook about 30 minutes or until chicken is tender. Add parsley and serve. Good with fresh salad and Italian bread. Enjoy!

    Hi Colarstar

    How about this idea we are haveing a meatloaf

    with a mustard sauce. But you could also have a

    Cheese sauce with it . Along with some broccoli or

    a Veggie of your choice. And a baked potatoe from

    the microwave.

    Make it a country theme night once every week.One week Mexican,next Chinese,Cuban,Thai,French,Korean,Italian,and etc.It would be interesting to get recipes from different countries and you'll have fun trying new things.Start Mexican night with Nachos,fajitas,and some guacamole salad.I hope this helps give you an idea.

    How 'bout a rice dish? Or a soup?

    Clean the fridge and freezer and toss it all together? I've done that. Serve something with pasta?

    Salmon Patties topped (or not) w/ a cream sauce. Served w/ croissants & asparagus (or rolls & English Peas).

    Breakfast foods, such as bacon, eggs, biscuits, gravy, omelet, sausage, pancakes, grits, etc.

    Why don't you make chicken florentine. Or a spinach and cheese quiche'. What about garlic, honey baked chicken.
