What exactly is clotted cream?
I've heard of it being served with strawberries and am curious.
Thanks.

Clotted cream has the texture of sour cream, but without the "sour" taste. It is difficult and time consuming to make - a recipe I recall started with...8 quarts of cream in a stock pot, simmer and stir constantly for six hours...or something like that.
Sometimes called Devon Cream, Devonshire Cream or (my favorite) Double Devon cream. It can be ordered at a nicer supermarket, or at a British foodstore. It's expensive: be happy if 8oz costs under $10-15. But there is nothing like it. Yummmm!

a thick cream made chiefly in England by slowly heating whole milk on which the cream has been allowed to rise and then skimming the cooled cream from the top -- called also Devonshire cream

It's the same thing as sour cream.
It is actually very good with strawberries.

clotted cream is nothing like "sour cream", it's a very heavy cream made from unpasteurizer cow's milk, also called "devon cream" (I have some in the pantry)
