jalapeno collect heat from the temperature they are grown in, but as you eat them you become adjusted to the heat and they do not seem as hot as they use to.

Fertilize a jalapeno plant well and it will grow hot. If you are looking to buy some in the store , it has to do with the time of year and also what kind of soil they were grown in. Just keep trying different stores and different times of year. Dont forget the ice cream!
