My chocolate chips won't melt right, why?
I put Nestle semi-sweet chocolate chips in a small pot, inside of a bigger pot with boiling water. I've done this many times to make chocolate covered fruit and pretzels. (I've never bought baker's chocolate) This time I got a big ol' lump of chocolate. It never got liquidy to dip into.
Why?
Maybe my bottom pot had too much water. Does this matter?
Did I buy the wrong chips?
I threw it out and started again. I am using less water at a lower temp and it is working. It's still kind of thick.

I think that water got in the chocolate and it seized up.
I don't think you can bring it back you have to toss it out and try again.
One little drop of water or steam will do this.

For candy making, you should use the "Candy Melts" that you buy in craft stores or bakeries. They melt quickly and consistently in the microwave and are very easy to work with. If you have a Michael's store in your area, try there first. They have chocolate in every color, a few candy molds for making lollipops, wrappers, boxes, etc. If there's no Michael's or other craft store, try a bakery. If you don't see candy supplies, ask the clerk if she knows where you can buy that stuff. Your local Wal-Mart may have a small selection of Candy Melts in the craft section - look near the wedding or the cake decorating stuff.

What you experienced is called 'seizing'. This happens when water or even a slight amount of steam comes in contact with the chocolate. I've heard that one can 'fix' seized chocolate, but when it happened to me, I started fresh. It was expensive, but worth it.

Milk chocolate will melt faster and more even than semi-sweet or dark chocolate.

did you wait until the water is bolling????
Actually the right way is to use cooking chocolate.....

Ive had the same experience, if this ever happens again, just add a tablespoon of milk! works fast.

no, the amount of water shouldn't matter. sounds strange, it should melt
