Recipe using chicken, pineapple and green peppers?

My husband and I were at his catered office party last week where they had kabobs with chicken, pineapple, and green peppers. Some of them had breading on them. Does anyone have any ideas on how to make these? They were sooo yummy.

    Here's your base recipe, if you want to skewer the main ingredients then cut them accordingly or make it as is, it's really good, I use Jasmine rice. I included a recipe for the S&S sauce if you'd like to make your own.

    Sweet and Sour Chicken

    INGREDIENTS:

    2 1/2 to 3 1/2 pounds chicken parts

    soy sauce

    water

    1/4 cup chopped onion

    1 cup sliced mushrooms

    1 can (8 ounces) pineapple chunks, drained, juice reserved

    1 bell pepper, sliced

    1 jar (12 to 16 ounces) sweet and sour sauce, 1 1/2 to 2 cups

    hot cooked rice

    PREPARATION:

    Place the chicken pieces in a large shallow baking dish. Sprinkle generously with soy sauce. Add water to baking dish to about 1/4-inch depth. Top chicken with chopped onions, mushrooms, pineapple, reserved pineapple juice, and bell pepper.

    Pour sweet and sour sauce over the chicken, using a little water to rinse sauce jar; add to dish. Bake at 400° for 50 to 60 minutes, or until chicken is tender and juices run clear.

    Sweet and Sour Sauce

    INGREDIENTS:

    1 small can pineapple juice (or juice from a 15-1/4 oz. can pineapple chunks, drained)

    1/4 cup ketchup

    1/4 cup brown sugar

    1/4 cup vinegar

    1 1/2 tablespoons cornstarch

    1/2 teaspoon granulated garlic

    1/4 teaspoon mustard powder

    1 tablespoon Worcestershire sauce (or less)

    1/2 teaspoon ground ginger

    PREPARATION:

    Mix all together and cook over medium heat until thickened. May be prepared in microwave in microwave-safe bowl. Microwave about 4-1/2 minutes on high or until thick, stirring every minute.

    INGREDIENTS

    1 (20 ounce) can DOLE® Pineapple Chunks, drained

    1/3 cup bottled barbecue sauce

    1 pound boneless, skinless chicken breasts, cubed

    1 DOLE Red or Green Bell Pepper, cut into cubes

    1 zucchini, sliced

    DIRECTIONS

    Drain pineapple; reserve 2 tablespoons juice.

    Stir together reserved juice and barbecue sauce in small bowl; set aside.

    Thread pineapple chunks, chicken, bell pepper and zucchini onto skewers. Brush with barbecue sauce.

    Grill or broil kabobs 10 to 15 minutes or until chicken are no longer pink, turning and brushing occasionally with barbecue sauce. Discard any remaining barbecue sauce. you dont have to use barbecue sause if you dont want too. you can just grill the chicken

    Chicken:

    Flour, salt and pepper chicken then fry in oil until light brown.

    Sause:

    1 can of chunck pinapple & water to make 2 cups.

    1 cup sugar

    2 Tbs corn starch

    3/4 cup cider vinager

    1 Tbs soy sause

    1/4 Tsp Ginger

    1 chicken broinlain

    Make It:

    boil and green peppers

    make rice

    put chicken and some sause in a pan cook for 30 min uncovered

    *can also be made in a crock pot!
