    If you like eggs, beat 2 together like you're making scrambled eggs and add some cut up pepperoni to the mixture. Throw in a little cheese and you have yourself a nice meal.

    You can also add some pepperoni to bread dough and make pepperoni bread. Buy frozen bread dough and let it unthaw, then slice it in the middle, add a generous portion of pepperoni and seal the ends together. Bake and cool, then slice for a great addition to your main meal.

    Thaw a loaf of frozen bread dough. Roll it out to a 12 x 9 rectangle. Brush dough with 1 beaten egg. Cover with 1 cup mozarella cheese, 4 ounces sliced pepperoni, 1/4 cup parmesan cheese, 1 tsp. Italian seasoning. Roll it up from the long side, seal the seam and the ends. Place on baking sheet. Bake at 375* for 40 minutes. Serve with pizza sauce. Pepperoni bread!

    Pepperoni Grinders! Slice it REALLY thin, and microwave it until the grease starts to come out. Put it on a roll with roasted red peppers and provolone cheese. Wrap in foil and bake for about 10 minutes in a hot (400 degree) oven.

    Italian-Style Beef-and-Pepperoni Soup:

    1 pound extra-lean ground beef

    1 cup sliced turkey pepperoni (3 ounces)

    Vegetable cooking spray

    1 cup sliced fresh mushrooms

    1 green bell pepper, seeded and chopped

    1 bunch green onions, chopped

    2 garlic cloves, minced

    1 teaspoon olive oil

    2 tablespoons tomato paste

    1 (28-ounce) can crushed tomatoes

    4 cups low-sodium fat-free chicken broth

    1 tablespoon chopped fresh or 1 teaspoon dried basil

    1 tablespoon chopped fresh or 1 teaspoon dried oregano

    1 teaspoon freshly ground pepper

    Garnishes: sliced fresh basil, shredded Parmesan cheese

    Parmesan Toast Points (optional)

    Cook ground beef and pepperoni in a Dutch oven coated with cooking spray over medium-high heat 8 minutes or until beef crumbles and is no longer pink. Rinse and drain beef mixture.

    Sauté mushrooms and next 3 ingredients in hot oil in Dutch oven 5 minutes. Stir in beef mixture, tomato paste, and next 5 ingredients. Bring to a boil; reduce heat, and simmer 30 minutes. If desired, garnish and serve with Parmesan Toast Points.

    Yield: 10 cups (serving size: 1 cup)

    Antipasti Platter

    A loaf of crusty Italian bread, such as focaccia or ciabatta, sliced bread sticks (you can wrap them in prosciutto)

    A variety of olives, such as niçoise and picholine, or caperberries

    Marinated sun-dried tomatoes, mushrooms, or artichokes

    2 to 3 wedges of cheese, such as Taleggio, aged goat, Manchego, and Parmesan

    Hard salamis, such as pepperoni, Genoa, or soppresatta

    Sliced fruit, such as apples, figs, and pears, or dried dates

    Arrange all ingredients on a large platter or several small ones and serve at room temperature with Chianti or your favorite red wine.
