    Ah, the Cheese steak. I'm a Philly Guy....so please allow me to share my love for and knowledge of this divine cuisine.

    The cheese steak was originally invented without the cheese....just as a sandwich (submarine roll and sliced up flank steak) that a vendor at a little place called Pat's liked to eat. he mainly sold burgers and hotdogs. Pats is still there...located in south philly (although his cheese steaks really aren't that good). SOme of his customers eventually asked him to try the sandwich he always ate...and they loved it.

    The next step in cheese steak evolution was of course the cheese.....it is frequently argued wether Pat's or Geenos (another cheese steak shop directly across from pats in south philly) made that step. Personally I believe Pats did it. The original cheese used was cheese wiz. Many people still use wiz, and wiz is often considered the pure cheese steak cheese. Personally I find cheese wiz disgusting and would never ruin a good steak sandwich with it.

    The cheese steak quickly spread throughout south philly...and then through the rest of the city...as a staple of local cuisine. I LOVE the damn things...although they are a bit unhealthy.

    Pats and geenos are the two most famous...and oldest...cheese steak places in philly...but I don;t like either of them very much. I am partial to Jim's (which began in west philly, but is now known more for being on south street) and dellasandros in roxborough.

    There are many many ways to eat a cheese steak. I personally find katschup and wiz to be revolting. If the cheese steak has good flavor why over power it? I eat mine with provalone cheese, fried onions, and fried peppers. Other popular ingrediants include sauteed mushrooms, pepperoni, mayo, mustard, salt, pepper, tomato sauce (this is usually called the pizza steak), and hot peppers.

    As far as cheese....the three most common...and acceptable...cheeses for a chese steak are American, Provalone, and wiz. DO NOT ORDER THEM WITH SWISS!!! I am partial to provalone.

    The actual meat is finely sliced flank steak. The meat quality ranges depending on the vendor. There is even a local restaurant owned by local celebrity restarentuer steven starr that sells a $100 cheese steak made from sliced kobe beef. This is obviously a silly gimmic and not a real cheese steak.

    Any other questions? I would be happy to give advice/directions on the best cheese steak places in philly. One final point....things you order at chain restaurants and subway are NOT cheese steaks. They taste nothing like cheese steaks.

    The cheesesteak is a comfort food for the natives of the Philadelphia region. It was invented in the city in 1930 and is considered to be a city icon along with other foods such as Tastykake, water ice and the Philadelphia soft pretzel.

    below are the ingredients and the preparation of cheesesteak:

    Steak is sliced into either thin or thick pieces and placed on a lightly oiled griddle. Locations that sell cheesesteaks cooked with thin slices of steak will grill the steak in a large pile, chopping and flipping the steak with a large metal spatula until cooked to a light brown. The thick pieces of steak, due to their need to be cooked more thoroughly, will be set in a single layer on the grill and flipped until brown. The meat is then transferred to a long roll, typically a 6-inch (15 cm) or 12-inch (30 cm) loaf of Italian bread. The bread is sliced lengthwise to form a cradle, similar to a hot dog bun. Along the inner sides of the sliced roll one of three cheeses is placed. The cheese is either melted beforehand by a warmer or is melted by the heat of the freshly cooked steak.

    In the Philadelphia area, cheesesteaks are often made with rolls from the Philadelphia-based Amoroso's Baking Company, commonly known as Amoroso Rolls. (Pat's rolls are made by the Vilotti-Pisanelli bakery.[3]) Locals believe there is something about "Schuylkill Punch", the nickname for Philadelphia's drinking water, that, by its alkalinity, makes the rolls distinctively flaky and airy. In late 2005 Pat's Steaks changed their rolls from Amoroso to Liscio's Bakery, of Glassboro, New Jersey.

    A cheesesteak may include other optional ingredients such as grilled onions, sautéed green peppers, mayonnaise, and mushrooms. Some menus include hot sauce, ketchup, or pizza sauce (a Pizza Steak, often with mozzarella as the cheese).

    A popular variation is the chicken cheesesteak, which uses thinly sliced chicken, also sautéed on a griddle.

    Cheesesteak is VERY famous in Philli.. but served in many many places.. it is very tinly sliced round steak grilled and then covered with provolone and or mozzerella cheese served on a sub roll. Many people like cheesesteak with other toppings as well as the meat and cheese like peppers, mushrooms, grilled onion or any combination of the above. I highly recommend you try one.. but before you do, ask around your area for a good reccomendation of where to get a good one :)

    ITS A FREAKIN SCAM is what it is. It gives those losers in Philly something to call their own. It is a waste of time spent in line just so you can be insulted by some greasy low-life while they take your order. Your reward- Steak-ums with Cheeze Whiz on a stale bun. I'd rather eat horse dung.

    Its usally shredded or deli sliced sirlion, topped with either melted swiss or provalone cheese.
