I am so out of ideas?

I have to cook chicken tonight and I am so lost for ideas of what to cook. Does anyone have any GOOD ideas for what to do with the chicken. Perferably recipes without cream of mushroom soup, I don't have any, unfortunately.

    Bruschetta Chicken Bake

    1 can (14-1/2 oz.) diced tomatoes, undrained

    1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

    1/2 cup water

    2 cloves garlic, minced

    1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces

    1 tsp. dried basil leaves

    1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

    PREHEAT oven to 400°F. Place tomatoes in medium bowl. Add stuffing mix, water and garlic; stir just until stuffing mix is moistened. Set aside.

    PLACE chicken in 13x9-inch baking dish; sprinkle with the basil and cheese. Top with stuffing mixture.

    BAKE 30 min. or until chicken is cooked through.

    Serving Suggestion

    Serve with cooked green beans and a bagged salad tossed with your favorite KRAFT Light Reduced Fat Dressing.

    Substitute

    Prepare as directed, omitting the garlic and using STOVE TOP Stuffing Mix Italian Style with Roasted Garlic.

    If you have ingredients for a salad this one is quite tasty (my husband loves it)

    chicken breasts

    italian dressing

    lettuce as well as your favorite salad ingredients

    cut thawed chicken breast (however much you need) into long thin slices and marinate in italian dressing for 15-30 mins. Cook chicken along with dressing on low heat with cover on and stir occasionally. When chicken is cooked all of the way through just top off your favorite salad with this yummy chicken and you are good to go.

    Have fun with it and make it look like something you would order when you are out.

    My personal favorite chicken recipe is Orange juice chicken.

    All you do is mix some orange juice from concentrate like you normally would to drink it. Then pour orange juice and a little soy sauce (tamari works too if you prefer) in a baking dish. Add chicken brest and bake. Its that simple.

    P.S. You could probably find a more exact recipe on the Web too

    * 1/2 teaspoon dried marjoram

    * 1/2 teaspoon dried rosemary

    * 2-1/2 pounds boneless lean pork, beef, lamb, venison, chicken or turkey, cut into 1-1/2- to 2-inch cubes

    * Italian rolls or hot dog buns

    SERVINGS 8

    CATEGORY Lower Fat

    METHOD Grill (gas or charcoal)

    PREP 10 min.

    COOK 10 min.

    TOTAL 20 min.

    DIRECTIONS

    In a glass or plastic bowl, combine first nine ingredients. Add meat and toss to coat. Cover and let marinate for 24 hours, stirring occasionally.

    When ready to cook, thread meat on metal skewers and grill over hot heat until meat reaches desired doneness, abut 10-15 minutes. Remove meat from skewers and serve on long Italian rolls or hot dog buns. Yield: 8 servings.

    I face this dilema too about once a week!! lol. I get tired of trying to decide what to cook. Here's a couple good ones.

    I just made this one last week and it was delish!...

    Thin some chicken breasts out by pounding them. Dust with salt, pepper, and flour. Cook in a skillet with olive oil until lightly browned and completely cooked through. Set aside. Add some chopped onion and garlic to pan and sautee until onions are softened. Add additional olive oil if needed. Be cafeful not to burn garlic. Add some chicken broth to pan to deglaze. Add some diced drained tomatoes (lightly drained if you don't want to use the chicken broth) and capers to pan and cook for a couple of minutes. Put chicken back in pan and warm through. Add some chopped parsley to pan. Put chicken on plates and top with some of the sauce. This is very versatile and can be served with many sides. My favorite to serve with it is homemade buttery mashed potatoes and steamed green beans simply dressed w/ olive oil, salt, and pepper.

    This is my girls favorite. And, it's easy.

    Chicken curry broc casserole

    3 cups broccoli florets (about 1 1/4 lbs)

    2 cups cubed cooked chicken or Turkey

    1 can (10 3/4 oz) condensed cream of chicken soup

    1/2 cup mayonnaise

    1/2 cup grated parmesan cheese

    1/2 teaspoon curry powder

    1 cup cubed fresh bread

    2 tablespoons butter or margarine, melted

    Cook broccoli in water in a covered saucepan or microwave

    until crisp-tender; drain. Place broccoli in a greased

    11x7x 2 (2-quart) baking dish; set aside. Combine chicken,

    soup, mayonnaise, Parmesan cheese and curry powder; spoon

    over broccoli. Top with bread cubes and butter. Bake

    uncovered at 350 for 25-30 minutes or until heated through.

    I am making chicken piccata tonight. The recipe I use is from foodnetwork I would type it but I would be here all night doing it lol.

    Chicken under the broiler, base with soy sauce, a little oil, and salt/pepper

    Chicken stir fry: cut chicken, and veggies in to chunks, stir fry with a little butter, soy sauce, little brown sugar, garlic, and ginger, thicken with flour water, or corn starch/water. Serve with rice.

    Bar-b-que: salt/pepper, at the end baste with your fav bbq sauce

    Chicken w/ pineapple chunks: flour and fry crisp, Darin outside of oil, in new pot or pan, mix can pineapple, with brown sugar, and bell pepper, red and green, add chicken, touch of soy sauce, thicken with flour/water

    boil chicken in water, with salt. Half way through, skim off fat, add more salt to taste, add ginger, water crest, fresh mushrooms, little pepper. Fresh spinach if you like, to wilt. Serve as a soup.

    Cut chicken into big chunks, add potatoes, carrots, celery, other veggies as you like, boil in water and salt. Skim off fat, thicken w/ flour/water and serve as a thick soup or stew.

    look up a recipie to make jerk chicken...or curry chicken...fried chicken...or experiment like i do sometimes...those usually come out good...lol....bon apetite...
