Gluten Free Baking?

My hubby just found out he has to be gluten free for the rest of his life. His birthday is coming up and I need a good gluten free birthday cake recipe. He is also allergic to chocolate. Also, does anyone know of a gluten free cake flour or gluten free cake flour recipe? He really is picky about texture so if you know of a flour that isn't "grainy" that would be fantastic! Please help. We just got the diagnosis last week!!!

    Hi. Well I had a great answer til I saw the allergic to chocolate! (Is this something he's been tested for or something he feels he has? Many Celiac's find their secondary allergies go away after their body heals on the gluten free diet.)

    Pamela's products are awesome and she's supposed to be coming out with a yellow cake mix. her choclate one is AWESOME but he cant have that. However, there are some great companies such as Bob's Red Mill, Arrowhead Mills and others easy to find online (I'll list sites.)

    Also Bette hagmans' cookbooks are great and I believe she has a bday cake recipe.

    I think I would make him a cake out of ice cream! Stack layers of ice cream (cut from straight-sided half-gallons), then ice w/ more softened ice cream, then decorate w/ icing on the edges and write on top.

    Gluten free is a tough diet, and gluten is hidden everywhere. Find a registered dietitian at a local hospital and visit him/her for a consultation. You will leave enlightened and empowered to handle the diet.

    I believe Arrowhead Mills makes gluten free cake mix.

    Check out your local health food store, or Whole Foods or Wild Oats store.

    A friend of mine has a daughter who has ciliac and has to eat a gluten free diet. She heads a ciliac support group.     bobs red mill makes great gluten free mixes. however buying them at health food store can get pretty expensive. so check a regular grocer first, and in you live in new england, try to get it from ocean state job lot (www.oceanstatejoblot.com) they sell the mixes really cheap:)
