Does anyone have any suggestions for interesting sack lunches for my husband?
He works outdoors so it must keep well in a cool box, and not need reheating.

I make pasta salads w/ fresh olives, onion, cherry tomatoes, and feta for my husband. I always change the basic pasta and sauce but I end out adding the same extras, and my husband loves it. It started w/the Suddenly Salad mixes and the more I made I just started getting dry pasta's and salad dressing's. I put them in a bowl w/a lid and put an ice pack in the lunch box and it keeps. No special thrills, and he loves it.
I also get specialty hot dogs-- the really good ones and put them in a regular bun w/cheese. He adores that too. I don't use the ice pack for that.
Good luck!

I had the same problem trying to figure out what to pack for my husband. I usually just send sandwiches in the summer, in the winter I use a good insulated thermos and put soup or other leftovers in it and it really does keep it hot!

Pita bread sandwiches.
Chef salads.
Cheese, crackers and meat bits.
Pizza boats. (if hubby likes cold pizza)
All condiments can be purchased in those little packages like you get at fast food places. Then he can add whatever he lies!
