Where should I visit in Bangkok and Northern Thailand (see details)?

I'm visiting Thailand in late January, early February. I've done the usual stuff: temples, Grand Palace, floating markets, night bazaars and beaches. I'm looking for something new, some places to party. I'll be in Bangkok, Chiang Mai, Chiang Rai. I'm in my mid-20's, traveling with friends and family.

I'm also bilingual, so I can go most places easily and unfettered.

Thanks for any tips you've got.

Update:

Hi spanky, I think a better word would be เสรี (say-ree). อิสระ "itsara" is more like political freedom.

The trekking option won't fly with my elderly parents, but if I might take off with my friend.

i would book a 3 day trek in CM or CR. I did that a few years ago and it was still hard to beat! It is a little rugged, but very fun, especially if you are with others you know. You walk, ride a bamboo raft (they make in front of you), ride elephants, and stay in long houses with the locals. It is cheap too. You can book a trip in BKK or CM/CR with any local agent. Believe me - it will be great!!
