It does go bad - it just takes longer because it's a cured meat.

Typical bacon contains the following: sugar, smoke flavor, and............
High salt content....... Natural anti-bacterial and a preserving method.
Sodium Nitrate.. a preservative.
Sodium Erythorbate.. a preservative.
Sodium Phosphate.. a preservative.
I think it is all the preservatives:-)

High sodium content not to mention most of the water has been cooked out. back in the ole days they used salt to preserve food when refridgeation was not availiable. not to mention they used to dry meats as well.

It does, it just takes a bit longer due to the salt & preservative content in it.
