This is really up to you, hun. Do you prefer candids (photojournalistic style)? Or do you prefer posed pictures?
Most people opt for both, but the current trend is the photojournalistic style. I would do the requisite posed pictures with the entire party on the beach. Maybe have them kick off their heels in the sand and capture the beach feeling of sun, surf and sand. Then, after those are done, have the photographer follow you guys on the beach kissing, running in the waves, get shots of you guys walking near the shore hand-in-hand. Those are the pictures that usually turn out the best, and that you want on your wall.
I would look at various photographer's wedding portfolios online and save the ones that catch your eye. This will help you to also figure out what style you want. Then tell this to your own photographer, but also allow for his or her input, especially if they specialize in wedding photography. Incorporate his/her ideas as well as your own, and you'll have so many beautiful pictures to choose from.
If you're not at all picky and want to put the judgment completely in the photographer's hand, I'd say go for that as well. But if you know of certain shots you want (group shots including certain people) also outline those as well. Your photographer will want a list of everyone that is to be photographed so that they aren't left out.
Hope this helps!

If its at sunset you definitely want a good shot of the two of you at a decent angle in front of the sunset. Also ask if he does black and white photos. Some shots are just better iin black and white. I'm a wedding photographer assistant so I know some good shots. If you want a funny shot you could get your husband and all the groomsmen to stand a decent way behind you and you lift up your foot to make it look like you're squishing them with your foot. The photographer will have to be on the floor so he may not want to do it because its sand. You could draw a heart in the sand and put your rings in it and he can take a picture of that. You may also want a shot of you and your husband walking off in the distance with a nice shot of your footprints in the sand.

Sounds like a lot of fun.
I have an idea for you which is my personal taste:
Have pictures taken where you and your man are playing along the shore. Perhaps running towards each other or splashing water at each other. Taling with your bridemaids. While he/she takes natrual pictures. Meaning, you don't pose to the camera, rather, he takes pictures while you are doing your thing.
I always find that those pictures that were taken by surprise and the bride and groom didn't pose for them, are the best ones, and people are intersted in looking at these pics years after the wedding. Probably because they are more interesting.
