what am I doing wrong when making biscuts?

I don't have a pastry cutter so a friend told me to use a fork and knife like she does have also tried to use a blender and my hands. I get the same results everytime. If you eat them when they are hot they are soft and perfect. Once they cool off (usually with ten minutes) they are hard as hockey pucks. Any ideas of what I need to do?

I'v used several different recipes.

I don't think I'll find one on the back of a choc chip bag hun, thats UK bisucts which we call cookies

okay round number 10 will try not to over mix and will eport back, this is something I will accomplish!!

    Simply to use less heat or less time, lower your oven heat 1 mark down and take 5 minutes of the time. If it still happens do the same again, take another mark down and another 5 minutes.

    You may be over working the dough. Once you have the flour and shortening cut in (and that should be like meal but you should still see bits of butter or shortening) Add the liquid and stir just until the dough comes together. Turn everything out onto a lightly floured board an just knead it for 30-60 seconds. Cut your biscuits out using a floured cutter.

    The big thing is don't over work the dough once you add the liquid, that is what develops the gluten that makes those hockey pucks.

    Sounds like you are overworking the dough. Once your wet ingredients are mixed with the dry, you should knead the dough about 5 or 6 times gently. That's it! And make sure your work surface has some dusting of flour.

    Goodness, I have got the total opposite problem and was just coming to ask! Mine crisp up when first out of the over and then go really soft. I want them to be crunchy!!

    Try keeping the biscuits covered with a damp towel.

    you could be cooking them too long. Also change the recipe, the one on the back of chocolate chips is usually pretty good.

    You ova may be hotter than it's meant to be too.

    Just use your hands to mix.

    get some bisquick and use the directions on the box and they should come out great
