Anyone have a recipe for a boiled whole chicken for burritos?
When I go to my favorite Mexican restaurant, they have a pot of shredded chicken in some sort of broth. The broth is reddish in color. Does anyone have a good recipe for this type of chicken?

Sounds like they boil or stew the chicken in water seasoned with red chili peppers.
I've put a whole chicken on a rack in the crock pot with three cloves of minced garlic, a diced onion and a couple of red chili peppers. I pour in some water.I don't want the water above the rack. I usually use a couple of chipotle peppers but you can use whatever kind you like. I season with a little salt.
When the meat is tender, I pull it out and shred it. I strain the broth, chill it and remove the layer of fat. I pour the strained broth over the chicken.

Don't boil it and pour out the water. That is chicken stock for another day. Cook it in a slow cooker or crock pot. If you are using a whole chicken take off all the skin and cut it up. It will be easier to pull off the bones. Put some of your spice mix on the chicken and maybe a couple slices of onion or pepper under it. Crock pot for 6 to 8 hours and pull the meat off the bones with two forks. Toss it back in the crock pot with the rest of the spices and put it on high for an hour or low for a couple hours until ready to eat it. It is the Chili powder that makes the sauce red.

You should ask them how trhey make their chicken. I make mine with different spices but, the only thing I know of that makes it reddish might be chipotle. As far as the shredded shicken goes, you just boil it until it falls apart easily so it will shred. I use spices like Adobo, and ancho chili, it is in a powder and adds flavor without the spicyness.

i make something like this - you need sazon packets found in the goya aisle..its a spanish seasoning the gives great red color to food
cover chicken in water - boil for 45 minutes
throw water out. let chicken cool. take 5 cups water add 2 sazon packets and 1 small can diced tomatoes with peppers in it let it all simmer. shred chicken and add it to the liquid. cook 10 minutes and serve
