Your cat griting her teeth is very normal. Cats can't stand any kind of insects, from flys, to mesquitos, to moths etc. Anytime they see any insects they will have some type of reaction. Its also in their nature to catch and eat any insects. Which is a very good thing because it keeps your home free of any insects. Trust me, I have two cats myself.

Cats are very sensitive when it comes to noises. My 1 year old cat doesn't like the sound of brushing hair and pulling off stickers. She will twitch her tounge and lick herself constantly until I stop. Your cat is probably hearing the buzzing noise of the fly.

Natural hunting instinct. My cat is fat, declawed, and has lived indoors all his life, but he goes nuts and hunts whenever he sees a fly. He makes this terrible crackling "mew" when he sees one, does your cat do that? Once, he killed one by pushing it in into the corner of a windowsill.
