    Something Different For Dinner

  • 1 decade ago

I have a really easy homemade enchilada recipe and Spanish rice recipe. It takes only a few ingredients and take about 30 minutes for prep time and bake time. My family loves it and I have to feed 5 total and we always have leftovers.

For the enchiladas you will need corn tortillas, cheddar cheese, onions, canned chili, chili powder, oil and water.

For the rice you need rice, oil, chili powder, water and diced tomatoes.

I use a cast iron skillet for the rice. First I put a little oil in the skillet, just enough to cover the bottom of the skillet. Then I add the white rice to the hot oil, again just enough to cover the bottom of the skillet. I let the rice cook until it starts to turn a yellow brown color. Some people call this popping the rice. Then I add chili powder, water and the can of diced tomatoes. Then just cook until the rice is done. Make sure not to let it dry out.

For the enchiladas I put water, 2 Tbsp of oil and 1/4 cup chili powder in an iron skillet and heat on medium. I use this to soften the tortillas so they will roll. I place 1 or 2 tortillas in the skillet to until pliable. Not to long or they will fall apart. Then I place the tortillas flat in a big baking pan. On each tortilla I put a spoon of canned chili that I have warming in a pot. I also put some onions and grated cheese on the tortilla. Then I roll it up and start on the next one. After the pan is full I make sure to coat the top of all the enchiladas with chili and sprikle with cheese and onions. I then place the pan in an oven for 15 minutes at 350 just to melt the cheese. Serve with the rice and with chips and salsa.

    Hope this helps.

Without knowing what YOU consider 'new and exciting' it's hard to make suggestions.

    Venison goulash?

    Eggplant Parmesan?

    Curried calamari?

    Sushi?

We're having goulash. (Cube beef for stew. Brown well in olive oil with a cut-up onion or two. Add a couple of tablespoons of hot paprika, a couple of bell peppers cut into chunks, a dash of vinegar, and water to cover. A little red wine works well too. Simmer until meat is tender. Add a can of saurkraut [optional, but I happen to have half a jar left from the other night], some caraway seeds and, if you wish, some sour or heavy cream. Heat through. Serve over noodles. (Or add potatoes to the pot when the meat is half done and serve as is.)

EDIT: I don't cook with salt, but if you do, and don't use the saurkraut, you might want to add some salt.

This is a microwave dish that is actually pretty good. It takes about 7-9 minutes per plate but it is a fairly quick prep time.

For you and your family, get the following ingredients:

    6 chicken breast fillets

    1 - 2 cans kernel corn

    1 gr pepper chopped fine

    1 red pepper chopped fine

1 - large tomato chopped fine

    1 onion chopped fine

1 bunch of cilantro - chopped

3 tablespoons oil (canola is fine)

    2 teaspoons cumin

    2 teaspoons chili pepper

    2 tablespoon lemon juice

    salt and pepper to taste

Cut all of the vegetables and add all spices, oils and juices together with the strained canned corn in a bowl. Cover a baking dish with oil and place cut strips of chicken breast in a circular fashion around the baking dish. Salt and pepper. Cover with vegetable mixture evenly. Put in the microwave on high for about 6 minutes and check - please be mindful that it will be HOT. Check the chicken for any pinkness - if it is, return to microwave and cook for another 2-3 minutes or until done. HINT: You may want to put some kind of glass cover over the dish so as to minimize splattering inside your microwave, and also, improve the convection so that your meal cooks faster. Serve with Pilaf or Rice-a-roni~Bon Apetit!

If you are interested in Indian food, you could try some chicken curry. The easiset way to make it is using a "Shaan" masala packet. You will find this at any Indian grocery store. The packet contains a pre-mix of spices.

You will need to fry some onions in oil until they are light brown. Put some chiken in it, mix, add the Shaan packet (4-5 tbl spoons) depending on the quantity, mix and let it cook until chicken is tender.

You can eat with bread or rice.

There are some other Shaan spices available also, but chicken curry is probably the easisest and least time consuming to make.

My son loves barbecue chicken sandwiches. We'll have sugar snap peas on the side. Add apple or pineapple slices and some cottage cheese and it's a pretty nice easy delicous dinner.

Boil chicken breasts for 4 minutes, cut to center with a knife to make sure cooked thoroughly. Remove chicken from stovetop and drain wtr

Allow chicken to cool for 5 minutes

Use a fork to shred the chicken into a crock pot or serving dish

when all chicken has been shredded, add one 12 oz bottle of your favorite barbecue sauce and mix thoroughly

I usually nuke this in the microwave for 2 minutes, if we can't wait to eat

otherwise, allow this to simmer on low in the crock pot for one hour

spoon chicken onto hamburger buns, dinner rolls, biscuits or fill a tortilla

Easy to freeze and/or reheat later for great leftovers

what about making some beef and chicken shish kebabs? my husband and i made it the other night and the kids loved them!

i use beef stew meat and chicken tenders cut up into bite sized pieces

first i marinated the beef and chicken in teriyaki sauce with some garlic (the chopped up kind from a jar)

then i put them on the sticks and sprinkled them with a little cajun seasoning and grill to perfection!

    they are absolutely delicous

you could even throw on your favorite veggies as well!

a great side for that is grilled potatoes

slice the potato like you would for a chip

make a foil packet, and add sliced onion, butter or olive oil, salt, pepper, garlic powder and onion powder

    grill to perfection!

there are sooo many great options out there-i am always looking for new ideas as well. we love grilling in my house..im sad the season is almost over!

Take a piece of chicken, pound it flat and about 1/4 inch thick. Cook it. Cover with bbq sauce.

Cover it in monterey jack cheese, cooked bacon and green onions. Put it in the oven at 350 until cheese is melted (or chicken is warm again). I think its best with garlic mashed potatoes.

It may seem kinda hard but its not. The left overs are great too :)
