How closely does the INS watch Ukrainian women that marry American Men?
How likely is it that we will be investigated by the INS and if we will, would they do surprise inspections? How closely do they watch us, if at all? We are 17 years apart in age and her sister lives close by. Should we take special precautions to prove our marriage? She does have her green card (got it about a month ago) and so far as we know, we have done everything we are supposed to do. I recently read that the INS considers our marriage a high probability of fraud because of the age difference, where she is from, and because the course of events surrounding her getting here and getting her green card happened quickly. Does anyone have a similar experience marrying a Ukrainian woman with a large age difference (greater than 10 years)? What should I be expecting?

As long as they do not suspect fraud, it is likely that you will never see or hear from USCIS again, unless her green card is conditional. In that case, when you apply to remove the conditions in 2 years, you may have to go for another interview... "may" being the key word.
My wife has her green card based on our marriage, and the only time we were questioned about our marriage was at the initial green card interview (which you've already gone through).
We live our lives like any married couple, and keep no special records. We do own joint property, we have bills in one or the other's name at the same address, keep them informed of any change in address as required, etc - all things that can be checked by USCIS without ever seeing us in person.
Most people who talk about having problems are simply passing on misinformation about things that they really have no personal experience with - including those who claim she married you for a visa.
And there is 14 years difference between my wife and I.

Marriage is the one sure way to become legal in America.
If you can find an American stupid enough to marry there is only a cursory interview. No inspections no surprises. The only time you will have contact with USCIS is in writing.

If she already has a green card, you don't need to bother with immigration at all. Now, if it's a conditional green card based on a marriage with someone else, that may be a different story, but if she already has one based on something else, where's the problem?

Given the fact that sham marriages are almost the universal rule coming out of the Ukraine, you should use an attorney in all your dealings with USCIS.

I have a friend that married a German lady after she arrived here in the U.S.. He has been through hell with f?#k heads that need to justify their paychecks. With all the illegal immigrants in the states now, they feel like they are "capturing" one and therefore fulfilling an obligation to the system, even though there are 10,000 illegals still operating to the one he "caught". Just keep a cool head when dealing with the government over issues with this, I assume, loved one. If your situation is true and with no ulterior motives, you will be fine.
