what can I make with left over roast beef other than hot beef sanwichs?

    Beef stroganoff isn't the best thing to eat if you are trying to make healthy meals. Usually the meat is very lean, but the sauce that coats the beef and pasta is rich, fattening, and full of calories. You could try using low fat cheeses, milk, and sour cream to cut down on the fat and calories. Mixing in fresh vegetables is certainly a good idea as well. Our family favorite mix ins include broccoli, green beans, and sugar snap peas. Also consider making whole wheat pasta instead of egg noodles. You will save a lot of calories on the pasta by doing this.

    you can make beef and noodles, here is a cheap and easy way, if you want to cook for just one, you can just use a handful, you can use less or more meat to your liking, btw, just thought I would let you know, all these recipes are from livingonadime.com

    1 lb. leftover roast

    salt and pepper (to taste)

    1 cup water

    1 tsp. garlic powder

    ¼ cup flour

    1 lb. egg noodles, cooked

    Mix water and flour in a jar and shake well. Pour into saucepan and boil until it starts to thicken. Add roast. Cook until roast is heated though. Add garlic powder, salt and pepper. Serve over cooked noodles or on toast. Serves 6.

    Barbecued Beef

    3 Tbsp. water

    Put leftover beef in a saucepan and add water. Heat until warmed through on medium. Add enough barbecue sauce to coat beef and simmer for 3 minutes. Serve on buns, bread or toast.

    Roast beef stew

    * 2 cups cubed cooked leftover roast beef

    * 4 cups tomato juice

    * 2 (14.5 ounce) cans diced tomatoes, undrained

    * 2 cups water

    * 3 large red potatoes, diced

    * 2 cups frozen lima beans

    * 1 large onion, diced

    * 1 cup diced celery

    * 1 tablespoon beef bouillon granules

    * 1 teaspoon sugar (optional)

    * salt and pepper to taste

    * 1 bay leaf

    DIRECTIONS

    1. In a Dutch oven or soup kettle, combine all of the ingredients. Bring to a boil. Reduce heat; cover and cook until vegetables are tender, about 30 minutes. Discard bay leaf before serving.

    * 2 (8 ounce) packages fat-free cream cheese, softened

    * 3 1/2 tablespoons prepared horseradish

    * 3 tablespoons Dijon-style mustard

    * 12 (12 inch) flour tortillas

    * 30 spinach leaves, washed with stems removed

    * 1 1/2 pounds thinly sliced cooked leftover deli roast beef

    * 8 ounces shredded Cheddar cheese

    DIRECTIONS

    1. Beat the cream cheese, horseradish, and mustard together in a bowl until well blended.

    2. Spread a thin layer of the cream cheese mixture over each tortilla. Arrange spinach leaves evenly over the tortillas. Place two slices of roast beef over the cream cheese. Sprinkle with Cheddar cheese, dividing evenly between tortillas. Starting at one end, gently roll up each tortilla into a tight tube. Wrap with aluminum foil or plastic wrap to keep the rolls tight. Refrigerate at least 4 hours.

    3. To serve for lunch, unwrap and slice into 2 or 3 pieces. Only cut the rolls you will be using that day so the others do not dry out. To serve for parties, unwrap and slice the rolls diagonally into 1 inch sections, and arrange on a serving platter.

    Shred the beef and mix BBQ with it for BBQ sandwiches.

    Put it through a grinder and add mayo, relish, onions, cheese and make a beef sandwich spread. My mother did this when I was little and it was really good. I have not had it in years.

    Make calzones, bierrocks, or the like using PIllsbury fresh pizza dough. Just add some sauteed onion to the chopped roast beef, season to your liking, and bake until golden. Delish!

    Make tacos using the beef with some seasoning as your filling, or wraps with a tortilla or other wrap, dressing, veggies and the beef, or add some to a quesadilla - melted cheese in a tortilla that I nuke in the microwave..

    Normally i would just say fruit, but i think both. I really like the sugariness of the fruits but i love the piquancy and kick the produce bring

    Tacos. Shred it and fry your corn tortillas in hot oil. Add the cheese, lettuce, salsa and tomatoes. I serve with refried beans and pico de gallo or other hot sauce.
