What should the temperature be for an 18 pound turkey when done?

    My electronic roast alert thing says 180 F for turkey.

    The size if the bird does not make a difference. You can take it out about 170, and it will continue with carry over cooking when you tent it and let it rest for 10 min. It will finish up around 180.
