Any ideas for ways to make a wedding cake with a southwestern/Hispanic flair?

My niece is getting married and her fiance is Hispanic. They have an idea for what they would like their cake shaped like, but want fresh flowers in a southwestern flair. Any ideas?

    Have a cake iced with a lace pattern and scattered with large red garden roses (think flamenco dancer) and have a butter cake with dulce de leche filling.

    Can you have many small vases, each with one flower/bud, and arrange them in the shape of Mexico? Or if you're looking for the Texan flair, try a horseshoe. Prickly pear cacti have very pretty blooms, actually.
