What kind of wine goes good with grilled chicken?
I don't know much about wine. Also, whatever the best kind is, how is it served?

For specialty white wines I recommend - Cakebread Chardonnay is excellent with chicken, it is one of the best Chardonnay's you can buy. (I don't like Chardonnay but will drink Cakebread) Unfortunately you can only buy Cakebread directly from the Winery on line or in person... although some select restaurants have Cakebread on the menu. Another superior white is Blancaneaux from Rubicon.
For other whites, you can try Gewurztraminer - it's sweeter than a Reisling but if you like the sweeter taste and you are new to wine then start with a Reisling or Gewurztraminer. You can find fairly inexpensive brands at Trader Joes or at a Super Target. My favorite Gewurtz is Sterling.
Contrary to popular belief the rule is not "white with white" anymore. Traditions have changed quite a bit over the years. You can do a light red with Chicken depending on how its prepared. It is more than acceptable to do a Red Zinfandel, Syrah, Shiraz or even a Pinot Noir with grilled chicken. John Haven's has a delicious red called Borriquot that goes great with Chicken or Pork Chops. 1995 was an excellent year for Napa wines.
Unfortunately, the brand will depend on your taste. The best way to test something out is to start off at a Trader Joe's or Costco and buy a bottle. Costco has an excellent return policy if you buy a wine and dont like it, you can return it. If you are serious about wines, I recommend visiting a few wineries for their tours. You'll have an opportunity to taste a variety of wines and ask questions.
Whites are served chilled and reds should always be stored lying on its side in a dark temperature controlled room. (preferrably 55 degrees) Open a bottle of red at least 1 hour before serving to allow the wine to "breathe" if you don't have a decanter. Serve red at room temperature (roughly 65 degrees) Temperature significantly alters the taste of wine, especially reds.

First and foremost you should serve a wine that people enjoy. Secondly, you need to consider the affect of your marinade or sauce. My absolute favorite BBQ wine (where BBQ sauce is involved) is (red) Zinfandel. If you're simply using the grill as the cooking method, but plan to use another sauce, or simply charring the chicken, then you need to consider that as well.
For BBQ sauce, I'd go with zin. For simply grilled meats, you can find some great values Cabernet Sauvignon from Chili and Argentina. Other favorites of mine with wide appeal are Malbec (Argentina) and Tempranillo (Tinto) (Spain).
As to serving, most red wines benefit greatly from decanting. More specifically, exposure to air. The oxygen softens the bite of tannins in red wines. If you plan to serve red wine often, you really should invest in a decanter. Red wines are so much better after time in a decanter or in the glass.

Grilled chicken goes well with so many types of wine. For me, red wine works best with grilled chicken. Any of these would work well.
Merlot
Shiraz/Syrah
Malbec
Zinfandel
Enjoy!

i could save the salad ordinary. perhaps some blended vegetables with a gentle French dressing. Potato soup is heavy and somewhat creamy, so something somewhat acidic could offset it and pair properly with the fowl. you ought to even choose for an apple/walnut salad with a raspberry French dressing (vegetables, chopped apples, chopped walnuts, olive oil and a splash of raspberry vinegar) . it may stability the heavy creamy potato, the denseness of the fowl sandwiches and grant somewhat sweetness. in my view, i could ignore the sandwiches, throw the grilled fowl in the salad, and serve some crusty entire grain rolls heat from the oven. yet the two way, it sounds like a great menu. What time are we eating?

With grilled chicken I like chardonnay, chilled, unless we are talking BBQ, then I might go with zinfandel, or maybe a rose' from the rhone area...
