I would love to try something new and different for Easter dinner?

any and all ideas welcome desserts and main dishes or sides ,drinks have fun I feel like cookin :)

    My dad is in the Navy and for the past few years on Easter we have gone to his Commanding Officers house on Easter, Christmas, New Years Eve and about 3 years go I decided to make a standing rib roast for Christmas Dinner to try something new besides a basic ham, anyway, I went on line and found this recipe- http://www.foodnetwork.com/recipes/paula-deen/fool... and it has been a staple ever since, it is supper easy to make and EVERYONE always asks me to make it; Rib roast is kind of expensive but it is totally worth it, serve it with a side of Garlic Mashed Potatoes and whatever else you want and it is sure to be a hit!

    You can try my favorite meal.

    The Ceviche (Say-vee-chay) is an appetizer, Beans and Rice is the main course, and then is the no-name dessert. Good luck.

    Ceviche: You can eat it by itself, with tortilla chips or tortillas. Hope you like it.

    Cooked Shrimp cut into pieces

    1/4-1/2 bunch Cilantro-chopped

    1/4-1/2 Onion or 1 small onion-diced

    2-3 Tomatoes-diced

    3-4 limes

    Salt and pepper

    Stir everything together. The reason for more or less on the ingredients, is how much or how big of each ingredient. It's really all about the shrimp. You can eat by itself or with chips. Oh, and if you don't like a ton of lime, I would start out with one, and taste. Add more if there isn't much lime taste.

    Mel’s Beans & Rice

    Cook rice first. Then cook beans while rice is cooking.

    RICE

    1 Tbs. olive oil per cup of rice

    Water

    Salt

    Heat oil in skillet on high. Add rice and fry. Stir occasionally for first few minutes. Do not walk away. When rice starts “puffing”, stir constantly until rice is about to or starts to brown. Add water till it is ¼ of an inch above rice. Add salt and stir. Turn to low* and cover. Let cook for 30 minutes and stir.

    *If cooking on a flattop stove, turn to medium and cover. Cook for 15 minutes and turn off stove. Let rice continue cooking on same burner for 15 more minutes.

    BEANS

    2 Tbs. olive oil

    ½ small sweet onion, sliced thinly crescent moons

    2-3 cloves minced garlic

    Cumin

    1 14.5* oz. can of diced tomatoes

    Cilantro to taste

    2 15.5* oz. cans of beans

    Salt & Pepper

    *These are regular cans. So it doesn’t have to be exact. You can use 1 of the large cans of beans for 2 of the regular ones. I like to use red and black beans. For every 2 cans of beans, use 1 can of tomatoes. You can also add other veggies such as bell peppers, etc. and combine with the onions step.

    Heat oil in a sauce pan on medium. Add garlic, onions, and cumin. Sauté until onions is soft or till sautéed preference. Add tomatoes and cilantro. After mixture is bubbling, add beans, salt, pepper, and heat till bubbling. Lower the temp to keep it warm till everything is ready.

    No Name Dessert: From my mother.

    About 1/2 pint of strawberries, sliced.

    2-3 bananas sliced

    1 1/2 TB sugar

    2-3 good size dollops of sour cream (Start with 2)

    Stir together. If you like bananas, add more or less. Same goes with the strawberries. Add more sugar if it needs to be a little more sweet. If the sour cream is too thick, add a little more sugar. The sugar "melts" the sour cream.

    Chicken Cordon Bleu. It has ham in it, so any of the purists will be pacified. It's also special and yummy. You can find simpler versions to make (a friend of mine does it in a casserole by layering everything) that are still delicious.

    i know i didn't really help..but i'm not sure what to have for easter.

    we are grilling outside, steaks, hamburgers..just food that we love..

    (maybe macaroni & cheese, something comforting, comfort food)

    Roasted Beef Tongue with Sweet and Sour sauce over rice is good.

    Bitter melon salad too.

    Do what my family is doing.......they're having chili & vegetable soup.

    Yeah, I know. I don't want to be there either.
