    Refried Bean and Rice Soup

    1 Can refried beans

    1 cup cooked minute rice

1 cup shredded chicken (leftover from another night or from rotisserie or canned even)

1 cup shredded monterey jack cheese

1 pkg mushrooms (sauteed in butter or olive oil), if desired

    Chicken broth to thin

You basically dump all the ingredients into a pot and thin with the chicken broth to desired consistency. Sounds kind of plain but it's delicious. Season with seasoned salt, garlic powder, black pepper, and anything else you think sounds good. You can top with chopped green onions, sour cream, salsa, shredded cheese or toasted tortilla chips. It's delicious!!

I used to have a grocery budget of $30/week for 3 people when we were really poor and I have a ton of really cheap recipes. If you want more and don't get enough answers, email me (jaimie_nebeker@yahoo.com) and I'll send you more depending on what you like. Just tell me the ingredients you have on hand in your pantry or what you guys do or do not like.

Meatloaf is good for a couple of meals. I like leftover sandwiches - I grill a meatloaf sandwich with any cheese I have on hand. Here is the link to the meat loaf:

Roast chicken is inexpensive and you can make enchiladas with the leftovers.
