Gotta have the cream cheese frosting otherwise it's just a muffin. LOL

Technically, carrot cake IS a muffin in cake form.

    With, definitely.

I found two kinds of cream cheese frosting: one that had butter and cream cheese in with the powdered sugar, and one that was just cream cheese. I picked the cream cheese and no butter, that one is all cream cheese flavor. It calls for just 3 ounces of cream cheese, I put the whole 8 oz. package in, it makes the frosting a little thinner in consistency, but oh it it cream cheese.

with cream cheese frosting for sure. not only is it the traditional frosting for the cake it brings out the carrot flavor.
