How can I spice up a baked potato?
I've discovered that I really like baked potatoes. Well, microwaved since I don't have a conventional oven, but anyway. I've added either pepper, half a slice of American cheese and/or butter. I want to keep from directly adding salt and I could use holding the butter. I'm not fond of sour cream and trying to keep away from red meat (no bacon bit recommendations). What to do?

You can put anything on a baked potato even leftovers from the day before. I like broccoli & cheese, butter & garlic powder and you could add other spices too. You could use peppers, onions-green or white, Jalepeno peppers, tomatoes raw or can be cooked or any veggies you like and have on hand. You could even top it with chili (turkey) or baked beans. Buttermilk, Ranch, blue cheese salad dressing or salsa. I like them plain with just spices like garlic powder, onion powder, black pepper, parsley or crushed red pepper too. I don't salt my food.

Make a cross on top of the baked potato, scoop out some of the flesh - Steam some of your favorite veggies, add the flesh of the potato, put the mixture back into the cavity, top with cheese & microwave until cheese has melted. You can also make a thick white sauce & pour over the potato.
Another alternative is to add fish to a white sauce & top the potato with the mixture.
Plain yogurt is a great substitute for sour cream served with potato
A delicious recipe but bad for cholesterol is to take brown onion soup powder, sprinkle over sliced potato, add blobs of butter/or margarine. Keep basting potatoes with butter/margarine, until potatoes are soft... great served with sour cream or yogurt

To make it somewhat stable, scoop out some million/2 the midsection of the potato and combine in a pair tablespoons of shredded sharp cheddar cheese and an 8th of a teaspoon of garlic powder and in basic terms a splash butter. A tablespoon of William Maxwell Aitken bits will boost it even greater advantageous. Spoon this blend back into the potato pores and skin and reheat interior the microwave for 20 - 30 seconds.

you can put chili over the baked potato like brown alittle turkey or beef meat drain the fat add half a can of black beans or red small can of diced tomatoes and half a diced onion bell pepper if u like and season with salt pepper chili seasoning garlic paparika and cayenne and heat up and mix well use small 10 can of tomato paste and heat up together well then pour over the baked potato
or
you can used canned chilly like bush's or another brand
or
salsa cheddar cheese and sour cream
or

i think you should use some oil to fry up some bell pepper and mushroom and that is one half of the filling.
scoop out the mashed potato and mix it with the bell pepper/mushroom mixture and add some tasty and mozzerella cheese and mix all together.
it tastes so good.
mix some mustard in too if you want and some pepper and herbs.
