I personally like "Oh, The Places You'll Go" by Dr. Seuss. Then, you can have them write about the places they hope to go and the things they hope to achieve during the school year.

A lot of younger kids enjoy reading Magic Treehouse books, which is a series of about 40 books by Mary Pope Osborne. Short and easy to read.

Sideways Stories from Wayside School by Louis Sachar. It was one of my kids favorites.

in 4th grade my teacher read "around cape horn" it went along with studying the gold rush in 1849.
good book.
