I would make the chocolate bacon ahead of time, then treat it like chocolate chips in your favorite pancake batter. Cook and cool your bacon, then crumble it. Melt semi-sweet or milk chocolate in a double boiler and mix the bacon in, spread it on a cookie sheet to cool then use it. That's what I'd do, I hope that helps. This sounds delicious!
