Can there be a gap of time between temporary contracts?

If a part time casual worker in the UK is employed on a one year contract, would it be a good idea to give this person a 3 months break at the end of his contract and then give him a new temporary contract?

I was told that if the contract is renewed as soon as the old contract finishes, this would entitle the employee to make claims if he wants.

Any advice and long answers are welcome.

If there is not any solution of continuity the employee can ask for a permanent position.

You're right - if you permanantly employ someone on a casual or self-employed basis then they can become classed as employed by you. The Revenue can insist that you either take them on as an employee (sick pay, holiday pay, NI, etc become due) or stop using them.
