Why do animal meanings differ from culture to culture?

The spiritual meaning of an animals can mean one thing in one culture and something completely different in another. Ie, Pigs are viewed unclean by some and they will not eat them, To others however, they're a tasty dish.

Anthropology has answers where upon some people are called to live a holy life, and the rest are left to sow and wander the ends of the world leaving them without doctrines regarding animals. The customs of the elders are inherited as means of survival and this eventually forms an culture that becomes ongoing as ancient.
