Why are there two wires inside my wall going into my outlet? Why not just one?
I am making a passthrough in my wall. I want to cut through the wire (getting rid of an outlet). I was wondering why there are 2 wires instead of 1 going into the small back blox behind the outlet. When I cut these two wires should I replace the ends into a new metal box?

it is called a feed in and a feed out, that means power comes in on one set and goes to the next outlet on the orthe set . you will have to rerout the wires and use a splice box. this job is best done by a pro.

Do not do anything with a live circuit.
If you are talking about the wires on the inside of the box and since you say there are only 2 wires this tells me you live in an older home. There should be a white which should be the negative or the neutral. The black or colored wire (any color other than green) should be the positive or the hot wire. If your home was a newer home it would also have a bare copper or green wire that would be the ground. The white wire serves as the neutral and the ground in older homes.
If on the other hand you are talking about the sheathed wires coming out of the back of the box then that means something different. That means that one set of wires is bringing power into the box and the other set of wires is bringing power to another outlet further down the line. If you cut the wires you will disconnect the power to the next outlet or light fixture (lights and outlets are not generally on the same circuit but can be).
Based on your lack of knowledge of electricity I would highly recommend that you hire a professional. Electricity can be very safe, but it can also kill in the blink of an eye.

Two wires mean that it is part of a circuit. All ends of electrical wires must terminate inside an electrical box. It also may go to a light switch, or ceiling light.
By removing the outlet, you may cut power to other outlets in the particular circuit.
Don't cut the wires, disassemble the wires inside the box and pull out of the box.
Be sure the circuit breaker is off before messing with the wires.

One wire is supplying power to the outlet. The other wire is taking the same power on to another outlet. If you break the connection there, you will be cutting off the power to the next outlet. Electrical outlets (receptacles) are usually daisy-chained through the walls. There could be several receptacles on that circuit.

you probably better call somebody who has a little more experience. These guys don't know why your outlets are wired like that. Maybe that box is feeding another receptacle. Maybe it's running to a light switch. There is not enough information.

one wire is live(usually white)possitive
the other wire is ground(Usually black)negitive
you must have both connected to complete the circuit
