WHY, does my corn bread ALWAYS turn out dry & hard!?!?

No matter what I try, it is always dry...please help me...

Update:

The "corn bread" is made from scratch and baked in a glass 8 X 8 pan...

Boxed mixes= gasp!! lol

    I don't know why you're complaining little missy, I make mine like that on purpose in the hope that Wilbur's one toof that he has left will break and then I can laugh at him for looking like such a retard!!!

    Dry b/c there is not enough liquid. Hard because you cook it too long.

    My grandmom makes cornbread like every day in a cast iron cornbread skillet and the edges of hers always turn out hard. I make mine in a glass baking dish and it tuns out much more moist.

    What recipe are you using? When all else fails, you could buy a box of Jiffy corn muffin mix & add a little salt so it's not so sweet. It's also good with sliced jalapenos!

    It sounds as though you're cooking it for too long a period. If you don't think you are, then perhaps your oven temperature is off and needs to be lowered. Get an oven thermometer so you will know how the thermostat in your oven is working.

    You need to cook it at a lower temperature or either add more liquid (water or milk).

    Are you making it from scratch or using those "just add water" packs? Those will never be as good as homemade.
