Can you freeze butternut squash before it's cooked?
My oven died this weekend and I can't roast the squash. I can microwave it like I did with my pumpkins for pumpkin pie. Can I freeze the squash if I skin and clean it and cut it up, or should I just nuke it until soft to make a pie/soup later when I have an oven?
Thanks, Pat. I will do that right now.

Butternut and Pumpkins store for ages if in proper conditions so why freeze them, I grow them and store them in a dark cupboard in the cool, they last for months and months.

Cut it into quarters or eighths (to cut down on cooking time). Wrap it in some foil with a knob of butter and a little sprig of fresh thyme (if you've got any). Stick it in the oven (around 200 degrees C). Take it out 20 or so minutes later. For an even easier recipe. 1. Turn on oven 2. Put whole squash in oven 3. Wait 45 minutes or so. 4. Take out of oven. 5. Cut up and eat.
