First thing that springs to mind when I read 'i love the beach, my boyfriend loves the mountains' is WANAKA. It's like the only place where you can surf and snowboard on the same day. So of course, surfing means the beach, and snowboarding means the mountains.
I swear it was Wanaka... It's by a mountain by the sea down South anyway. But you can also do that in New Plymouth. I suggest going there, it really is a beautiful place.

New Zealand is certainly a paradise. Thats in good weather only and sometimes the weather can be very awful. You say next Summer and I don't know where you are from so if it's june july august then that is winter in NZ and the best place then would be Queenstown for the mountains covered in snow and skiing etc. You wouldn't want the beaches at that time of year. If you want beaches then The GoldCoast or the Whitsunday islands airlie beach in Australia.

Queenstown is known as the adrenaline area of New Zealand. Yes, the mountains are breathtaking c;
Here are some of the activities, if you are the adventurous type, you might consider going here, good luck and congratulations!
