A balanced vegetarian diet is generally very healthy and often does lead to healthy weight.
That, however, is not a balanced diet. You need more variety and protein, as well as a reasonable amount of healthy fats. Shakes aren't a base of a diet; don't depend on them. They're a crutch at best, a quick-fix fad diet trick that doesn't help you in the long run.
If you really want to "eat only fruits and vegetables", eat more variety. A simple way to think of it is to count the colors you eat in a meal; the more colors, the better, and the wider variety of nutrients you get. Add nuts and beans for protein and whole grains to stabilize your blood sugar; nuts also provide some healthy fats. Avocado now and again is another healthy fat source. Balance your diet or you'll find yourself getting headaches, losing energy, skin getting dry and flaky, hair and nails going brittle, random moodiness... not fun.
