Is there a recipe for homemade pimento/pickle loaf out there?

My husband enjoys it, but with prices going up in the grocery store, it's getting to be somewhat unaffordable. I am looking for a recipe to make it on my own. Any help would be appreciated.

I don't know how my hubby can stand it, I really wish he would like something healthier, but for some weird reason, it has become a staple. I really rather him eat the ham, and turkey, and chicken deli sandwich meat, but I've tried, and on occasion I can sneak it in on him, but hardly ever. So even if you have suggestion for healthier loaf recipes, I will accept those. I am trying to create a staple list for our kitchen, that won't make me hurl. Tonight's dinner is pancakes, plain, simple, and quick, and it's not a loaf of anything.

    I did find a recipe, but not sure how good it will be. Good luck!

    Pickle Loaf

    1 1/2 lbs ground beef, broken up

    1/2 lb ground pork, broken up

    1/2 cup water

    1 envelope unflavored gelatin

    1/2 tsp garlic powder

    1/2 tsp onion powder

    1 Tbsp tamari sauce (soy sauce)

    1 tsp salt

    1/4 tsp ground black pepper

    1/2 cup instant nonfat dry milk

    1/4 cup drained sweet pickle relish

    Combine beef, pork and water. Cook 10 minutes in pressure cooker (or in a frying

    pan until done). Drain, reserving liquid. Place hot liquid and gelatin in

    blender and blend until dissolved. Add garlic powder, onion powder, tamari, salt

    and pepper. Blend again. Add the cooked meat, a little at a time and blend to a

    smooth puree. Add dry milk and blend thoroughly. Stir in pickle relish. Spoon

    into a greased 8x4x2 1/2" aluminum foil loaf pan and chill overnight. Pull sides

    and ends of pan away from meat and turn loaf out. Slice.

    Wow - that other posters recipe sounds awful! (sorry) I googled for a recipe and none to be found. Maybe your husband can learn to like something that is more healthy.

    I love olive loaf and get a sandwich from the deli once in a while. If I had it at home, I would gobble it up in one sitting - by itself and not in a sandwich!
