You don't have to, but it helps. I only do if they are cracked.

Eggs are kept in the fridge in the USA. Some countries keep them out.

As long as it's a relatively cool place, I don't think it matters that much. They're not kept refrigerated in the supermarkets... so I'm assuming that it's quite safe to leave them out of the fridge if you so wish. Having said that, mine are normally kept in the chiller... mainly because it's easier to keep them with the rest of the fresh food.

They can be, but it is better to keep them in a cool dark place. Eggs are often best used at room temp, so if you keep them in a fridge you would have to leave them out to reach room temp. (For example if you were making meringue, the eggs need to be at room temp). Room temp eggs are also better for boiled - less chance of cracking.

Any eggs that have been opened and are not used should be kept in the fridge, but it is really personal preference in the long run as to where you store eggs (and obviously cooked eggs need to be in fridge!).

I, personally, never keep eggs in the fridge. They don't need to be, so I don't (besides, I would forget to take them out to go to room temp should that be required!).

The Food Standards Agency (UK) recommends eggs are kept in a cool, dry place. Ideally, they suggest in a fridge but do not say it is compulsory. I have never seen them in the chiller at supermarkets, suggesting it is up to you.

See here for more information about eggs. Storage instructions at the bottom of the webpage. This is probably more helpful than 20 different opinions from people who all think they know best!

PS. Eggs are not dairy products. In a nutshell, "dairy" refers to milk products.

For freshness and food safety, eggs should be kept below 20C, a cool place or the fridge.

No. They aren't kept in fridges in the supermarkets, so they do not need to be kept in the fridge at home.

To Haley P, eggs aren't dairy. Dairy comes from cows e.g. milk, cheese, yoghurt, sour cream etc duh.

As to keeping eggs in the fridge, it doesn't make the blindest bit of difference if you do or don't

Well, there's no real answer to this question - it depends on your personal preference. The practice of leaving eggs at room temp vs. refrigerating them varies from country to country, person to person. Salmonella will grow far more quickly in eggs left at room temperature than in refrigerated eggs. Eggs will also last much longer when refrigerated than they will when left at room temp. So, if you plan on keeping a dozen eggs for more than a few days, I'd absolutely recommend refrigerating them. But if you expect to cook the eggs within a couple days, I'd say leave them out at room temp!
