What is a good side dish for fried catfish?
I need a good side dish that is not pasta or potatoes or rice to go with fried catfish. I know that narrows it down a lot, but I already have several rice dishes to my menu this payday and I'm trying very hard to cut down a lot on the pasta & potatoes. Thanks for your answers.

Yummmmmmm fried catfish! Here are some ideas:
1. Cuban beans
2. Corn on the cob
3. Cabbage salad
4. Fried green tomatos
5. Onion rings

Dear Jamie, One that I like to use is: Go buy yourself about 4 to 5 cucumbers, and some Creamy Italian dressing. When you get back home take them out of the bag and wash them,then get out a cutting board and a knife,and also a bowl,and a fork. Here is what you do: Take the fork and run it down the side of each of the cucumbers making lines all the way around on each of them. Then lay them on there sides and slice them thin. Then once that is done pour the dressing over the entire bunch of them that are in the bowl,stir them up and serve them as a side dish with your catfish,they go great with it. Be sure to keep them chilled until your ready to serve the fish okay. Eat and enjoy,hope the fish fry turns out great.

Go with deep-fried hush puppy's but don't stop there. Make a good slaw but put a twist on it. Use half the amount of regular slaw dressing and substitute the other half with Blue Cheese dressing. Add a little crumbled Blue Cheese to your liking. Also, try fresh green beans with julienne onions.

fried catfish - hush puppies, coleslaw, lots of tarter. baked trout - depends on how you bake it, if its fresh or farm raised... but if your going for a lighter tasting dish, lightly sauteed squash, rice pilaf or brown rice with mushrooms. If your going with more a bacon baked western flavour, the boys like their baked beans, corn and biscuits and with either .. cant forget potato salad...

Hush-puppies, collard greens, spinach, lentils, black-eyed peas, green beans, salad, corn. There is no limit to what you can do...look in the vegetables and side-dishes sections of any good cookbook.
As for your rice dishes, try brown rice instead of white rice (which has had all its nutrition removed).

My husband makes his version of succotash to go with fish. Can of green beans, can of corn, can of lima beans. Combine in a bowl, add some butter, cover and nuke for 5-7 minutes.
