What are the best things to see/do on Highway 1?

My friend and I will be driving Highway 1 from San Francisco to Los Angeles. We have 2 days to make the drive and see something interesting, we will leave SF on Sunday October 3rd and need to be in LA on Tuesday October 5th in the morning.

So what are the best parts of the road, what is there to do/see? We are from Europe, so will appreciate any advice :-)

    3 Day is enough for 492 miles, 11 hour driving hwy1 journey

    Must visit 1st day: Santa Cruz, Monterey

    2nd day: Big Sur, Hearst Castle

    3rd day: Pismo Beach, Salvang, Santa Babara.
