Keep wedding cake cool without refrigerator?

I am having a red velvet cake with cream cheese frosting at my wedding and I am worried about the cream cheese sitting out unrefrigerated (we are making it homemade, so no preservatives)... I defintely don't want to give up the cream cheese, but I don't have any way to refrigerate my cake at my reception site. It is indoors and air-conditioned, but still.

I was thinking about putting like a box/container over the entire cake with some dry ice inside to keep it cool... but I think that is going to look tacky. Any other ideas or should I just decorate the box and say the cake is a surprise? Lol!

I think youve got the right idea with the box and ice. Line the inside of the box with aluminum foil to sort of insulate it, and that will be plenty precaution!

I would keep the cake out of eyesight until maybe 30 minutes before you cut it. If its on the table there, a child may want to know whats under it, or the box may get bumped and ruin your icing.

It sounds really nice, and you have done a good job of making sure it is both delicious and safe for your guests. Have a nice wedding.

You can leave the cake in the refrigerator, or in a box with ice, until you are ready to serve it. It is not imperative that you have it on display throughout the reception. Have someone bring it in at the last minute. If someone asks what is going on, just tell him that you are saving it as a surprise. Best wishes!
