The space between stars within galaxies. (Between galaxies it is called intergalactic space.)
Strictly speaking it is the space between the influence spheres of the stars. Because stars have winds which create and outward pressure. Where this pressure is stopped by the interstellar medium, the sphere of influence ends.
This is, in case of our solar system, well beyond Neptune and Plute. It was reached and measured by the Voyager probes. There is a complicated structure, named heliosphere, heliopause, termination shock etc. Beyond that interstellar space begins. A few months ago the IBEX satellite measured particles from the boundary zone.

Interplanetary Space: Space between planets (EX: The space between earth and mars)
Interstellar Space: Space in between stars and/or planetary systems (EX: Our solar system is a planetary system.
Intergalactic Space: Space between galaxies (EX: Space between the Milky Way and Andromeda)
