Dictation errors: will "amount"/"number" always modify a singular/plural noun that's will be in a prep phrase?

In other words when deciding whether or not to use amount or number in dictation..

    No; they can be nouns as in ...Twenty comes after nineteen......I was a complete fool in my thirties.

    An amount is normally a weigh-able quantity and usually uncountable.
