Can I use flour from 2007?

I am making banana bread for a gathering and one ingredient is flour. I have no time to run to the store and I need to know if I can use flour from 2007. I literally just opened it a few minutes ago and I don't see any bugs or discoloration. Can I use it? It will be baked for 50 minutes at 325 degrees Fahrenheit.

    Sorry, I wish I could answer from experience - I can only draw conclusion from some online research.

    Most of the sources that I visited say that, if ALL-PURPOSE flour has been stored in a cool, dry place and it does not have a rancid odor, it should be fine to use. However, if you are using self-rising flour, your bread may not rise as well as you expect it to.

    You could also taste the flour. If it tasted peculiar to you, then you should probably let it go. If not, then it should be fine for your purposes.

    Mix a little with water in a small dish and heat it in the microwave. Then taste it. It will probably taste bitter or rancid and be unusable unless it had been vacuum packed. It might also contain moths, beetles or weevils.

    Me - I would use it since it sounds like it was stored properly.

    Others on YA will freak out and tell you to throw it away.
