What is it called when people who get a transplant of some sort from a cadaver and supposedly pick up some of the deceased's personality traits? Is it even a real thing?

I don't believe there is an actual name for it, what you're referring to is simply the transfer of memory from one persons conscience to another via a transplanted organ (as myth says usually the heart)
This is obviously myth, as denoted by in most "cases" the receptor got the new "personality traits" from a heart transplant. A heart, the organ we commonly link to the soul, the proverbial heart, the box where we keep our emotions.
There is a certain amount of memory transfer that can occur for instance from generation to generation, if your grandmother was victim to great famine, your mother and you will likely have metabolisms that "remember" how little food there was and conserve more calories. In the same way, if your mother was pregnant with you during a time of great stress (war time, physical abuse etc) you will very likely have higher levels of stress hormone and be more prone to depression, anxiety, alcoholism and a bunch of other things.
This type of memory that shapes genes and that origins from outside causes is called Epigenetics and it's one of Genetics most interesting and new areas right now.
There is also the notion that people born blind can have dreams of things they have never seen and it is assumed these images would have been transfered in their genes also.
But to go from this new immergent branch of science to "I got Brads heart and now I love fried chicken and rock and roll" is a big leap lol xD

It is not a real thing so it has no name. That only happens in the movies. Your organs can't think they can only function so how can they pick up personality traits. The only way that could happen is if you had a brain transplant and that won't happen until way in the future if ever and certainly not a whole brain but maybe parts of it. Who knows maybe they will find a way for organs to repair themselves and make transplants obsolete. That is a real possibility because they are working on that very thing right now

It is not a real thing. This would imply that genetic memory exists and that if you were cloned your clone would have your memories because it contains your cells.
