can i freeze peppers?
This is my first year ever as a gardener and i am currently growing cayenne peppers and jalapeno peppers (along side other veggies as well). i've been so busy lately i don't have time to use them but they need to be picked and used soon.....can i throw them in a sealed plastic bag and put them in the freezer until i need to use them?

Peppers are about the only "vegetables" that don't need to be blanched to destroy the enzyme activity that lowers the quality. Just throw them in a plastic bag or container and freeze. They can be used for cooking, not good in a salad as they are not crisp.
Technically of course peppers are a fruit, not a vegetable.

Yes you can, but the frozen peppers cannot be used as fresh peppers once they thaw. Still good for cooking though. You can freeze them whole but best is to stem and seed them and cut into cubes or slices that you would use for cooking. Then freeze them one layer deep in a wide pan or cookie sheet. Once they are frozen you can put them in freezer bags and they won't be all stuck together in one clump when time comes to use them. Simply take as much out of the bag as you need for each meal.

Usually not. Because they have an enzyme that keeps working even when you freeze them. This will deteriorate the quality, slowly. You need to blanch them first to inactivate the enzyme. Freezing will also deteriorate them due to ice crystals forming and bursting the cells. Commercially frozen veggies are blanched and flash frozen to thwart crystal formation. Most peppers are dried and stored expect jalapenos. Jalapenos have too much flesh and usually rot before they dry. That is why you see them canned.

Absolutely! I chop them up pretty fine, then vacuum seal them with my FoodSaver. Then throw them in the freezer. You can freeze as much or as little as you want. I have used them after 2.5 years and they taste great. Use as a topping for homemade pizza, or in a salsa, or in omelettes.

yes. you can. my dad used to grow peppers every year and he always froze them because, well. . . who uses that many peppers? lol

Yes, l did this last year and they were perfect to use once thawed.

Yes. they do better if you cut them open and remove the pith and seeds.
