What is the best way to get my Vet Tech Degree?
I have many animals and a lot of work to do (we run a horse boarding stable with 25+ horses, I have three of my own that I pay for, one dog, and several cats) so it can't be somewhere too far from home so I was hoping that there was a good online school that would allow me to get my degree in not too much time? With reasonable prices? Thanks.

The AVMA lists all the accredited distance-education veterinary technology degree programs on their website: http://www.avma.org/education/cvea/vettech_distanc...
For cost and quality, look at San Juan College. But understand that these programs still require you to be employed by a licensed veterinarian and have either the veterinarian or a credentialed veterinary technician mentor you and sign off on a large list of skills before you can finish your degree.
