Hi fellow seniors, what type of cake do you like?

I'm due to bake a cake for our local church pot luck supper and raffle.

I usually take along my customary spiced apple cake for the supper which I'm pleased to say always goes down well but I would like to make something different for the raffle.

So I would be interested in hearing about your particular favourites to give me some idea of what would appeal to the majority of people.

    Your apple spice cake sounds good to me, I love spice cakes. But I can understand your desire to mix things up a bit.

    You could tempt saints and sinners by doing an Angel Food cake and a Devil's food cake. Here are examples of recipes I've used:

    One of my neighbors made a version of this cake for me years ago, this recipe is the closest I've found. My neighbor made this cake for Rosh Hashanah, but I love it all year long:

    pineapple upside down cake is my man's very favourite

    mine would be a chocolate quinoa cake which has no gluten/flour/wheat in it so it is wonderful for those who have allergies to those things. its a lovely dense rich chocolate cake and i would think would sell very well at a raffle. sometimes those of us with allergies are left out!

    this is the recipe for anyone who would care to try it.

    Quinoa Chocolate Cake

    Makes one 8-inch (20 cm) round cake.

    2/3 cup (160 mL) quinoa

    1 1/3 cups (330 mL) water

    2 cups (500 mL) milk

    4 large eggs

    1 tsp (5 mL) pure vanilla extract

    3/4 cup (185 mL) butter, melted and cooled

    1 1/2 cups (375 mL) white or cane sugar

    1 1/2 cups (375 mL) unsweetened cocoa powder

    1 Tbsp (15 mL) baking powder

    1/2 tsp (2 mL) salt

    Bring the water and quinoa to a boil in a medium saucepan. Cover, reduce to a simmer and cook for 10 minutes. Turn off the heat and leave the covered saucepan on the burner for another 10 minutes. Fluff with a fork and allow the quinoa to cool.

    Preheat the oven to 350°F (180°C). Lightly grease an 8-inch (20 cm) round or square cake pan. Line the bottom of the pan with a piece of parchment paper.

    Combine the milk, eggs and vanilla in a blender or food processor. Add 2 cups (500 mL) of cooked quinoa and the butter and continue to blend until smooth.

    Mix the sugar, cocoa, baking powder and salt in a medium bowl. Add the contents of the blender and mix well. Pour the batter into the pan and bake on the center oven rack for 50 minutes or until a knife inserted in the center comes out clean.

    All of these cake recipes sure have me craving some now. They made me think

    of cakes I've had, to choose my favorite.

    I guess my all time favorite is a dark and rich chocolate cake with a whipped topping,

    very much like meringue. My mother made it alot after boxed frostings were at

    the stores. It was whipped to peaks with a mixer, but it was thicker than regular

    whipped meringue. I liked the flavor that was 'cherry chip', with pieces of coctail

    cherries in it. Those were beaters, even I wanted to lick.

    My second favorite is a pineapple upside down cake. Those are always a safe

    bet to take to a function. No muss no fuss baking.

    I love all flavored cakes, but for a raffle a Pound Cake made with real butter and a Peppermint Glaze. I used to throw Cinnamon Hearts into a plain simple glaze.

    My Mum bakes the chocolate cake recipe from the Bero book, absolutely delicious, not as flya away as sponge cake but yummy.

    Otherwise Muffin

    Hi, Lily, our local restaurant makes a strawberry poke cake you could die for. It is moist and delicious with just a butter cream frosting, and positively loaded with strawberries. I asked the server once how it was made and she said she believed it was from a mix and they added fresh strawberries to it. I've tried to duplicate it but no success yet. I'm sorry I couldn't be more help to you but talking about that cake sure made me hungry. As a matter of fact, I'm a little mad at you right now for even bringing up the subject! LOL

    Banana cake with cream cheese frosting. Oh so delicious. Pineapple angel food cake topped with whipped cream is good too. All it takes for the cake is the cake mix and a can of pineapple.

    Your apple spice cake sounds delicious.

    My favorite cakes include:

    Devils food with dark chocolate fudge icing (goes with coffee);

    Pineapple Upside-down cake (prepared in a cast iron skillet);

    Boiled raisin cake; and

    Carrot Cake.

    OH I could not pick out a favorite cake.

    I like making peach cheesecake. It always goes down well.

    So does my pineapple cheesecake and blueberry cheesecake,

    I also like making red velvet cake

    and victoria sponge with lemon butter frosting

    Another one that always goes quickly is apple and cinnamon coffee cake.

    OK going to stop there before I go bake. I just make a batch of strawberry muffins. I do not need any more!!!!
